Good morning and happy Wednesday! It’s to believe November is well underway. Going with my typical Wednesday theme, I’m linking up with Jenn’s WIAW party to share some of my kitchen creations from the past week. Readily-available ingredients like asparagus and corn tortillas came to the rescue this week, allowing me to work these staples into different dishes in no time at all.
Let’s take a look at some highlights:
Open face shrimp tacos– corn tortillas, sauteed shrimp, cheese, lettuce, and Newman’s Own Pineapple Salsa.
Brown rice and asparagus topped with a fried egg. Yet again, yolk comes to the rescue as a delicious, no-fuss sauce.
Alright, so I didn’t exactly make this one– an Amy’s Breakfast Burrito dug from the depths of my freezer. I’m a huge fan of Amy’s quality– as far as frozen meals go, hers are about as fresh-tasting and simply prepared as possible. I loved the combination of tomatoes, black beans, and potatoes in this one.
A simple fried egg and Cheddar cheese sandwich on an Arnold’s whole wheat sandwich thin.
Basic shells ‘n cheese, but fixed up with some asparagus I had on hand.
