Good morning! It’s hard to believe tomorrow is Halloween and it’s almost November. This month has absolutely flown. Come to think of it, it seems like this entire year has passed in the blink of an eye!

We’ll save all that talk for another day, though. Why? Because it’s Wednesday, which means I’m linking up to the WIAW party to share some of my recent eats from this past week. Thanks, Jenn, for hosting!

Grilled Cheese

A lunchtime favorite: my signature “Inside-Out” Grilled Cheese, with a side of broccoli and cauliflower. While the sandwich thin wasn’t as good as the English Muffin from the original version, I made it work!


A not-so photogenic bowl of Better Oats brown sugar and flax hot cereal, a component of this week’s breakfasts.


Sauteed shrimp, veggies, and brown rice.


Delivery pizza:  an old college standby.


I’m still on a quesadilla kick, so they made a repeat appearance this week. Instead of putting broccoli inside the quesadilla, I added some on the side.

  2. Fun idea to turn the bread inside out! I love using English muffins to make open-face sandwiches, especially when they’re toasted… The nooks and crannies fill up with cheese or butter + jam :) Lately I’ve been loving sweeter meals more than savory – pancakes, french toast, oatmeal!
