Good morning and happy Wednesday! I’m popping in this morning to share some of the week’s meals and snacks (that I remembered to photograph!). Aside from trying to create balanced meals, convenience has been my ultimate consideration this week in terms of food. I wish it weren’t this way but, hey, it happens, right? Although my meals were convenient, they certainly were delicious. Thanks, Jenn, for hosting the weekly link up!
Breakfast for Dinner: two fried eggs, a toasted sandwich thin, and sugar snap peas. You really can’t beat eggs for fast protein.
I left South Carolina before 6am on Sunday morning. Right after I hit the road, I decided to make a quick stop for an egg white flatbread sandwich from Subway. I added some American cheese, tomato, red onion, and cucumber. I’d never tried Subway for breakfast, and it was surprisingly good.
Snack of plain Greek yogurt, Chia seeds, and Kashi Heart-to-Heart. The combo of protein, carbs, and healthy fats kept me satisfied until dinner.
Kashi vanilla-flavored hot cereal with apple chunks! I’ve finally made the transition back over to warm breakfasts. I’d forgotten how much I missed them!
A bowl of brown rice mixed with tuna fish and green beans. One-dish dinners made a comeback this week!
So, there you have some of what’s coming out of my kitchen this week. After a morning workout and classes, my two-day “reading break” begins in preparation for more mid-terms next week. In spite of the all the studying in my near future, I’m looking forward to the break!
