Good morning and happy WIAW! Thanks for hosting the party, Jenn! Per usual, I can’t wait to check out your recent eats for some inspiration in the kitchen.
I’m going to take a less traditional approach to WIAW from here on out. Instead of posting a full day of meals and snacks, I’m simply going to share some random pics of good eating here and there, spread throughout the week. This week, I just wasn’t on top of my game with the photos, and I’m thinking it’ll continue to be this way once I get inundated with school very soon.
My mom’s shrimp fra diavolo, paired with a green salad. I love pairing my pasta with a simple, fresh green salad. Her recipe is a must-try if you are in the market for a delicious pasta dish.
Chocolate chip cookie dough Quest Bar after a lift. Yum! If you haven’t had this and are a cookie dough fan, you absolutely must! It’s essentially a hunk of sweet, salty, buttery cookie dough, but with 21 grams of protein and non-sketchy ingredients.
A chicken cheesesteak from the most fantastic gas station on the planet, better known as Wawa. If you are from the Philly, New Jersey, or Maryland area, then you know exactly what I’m talking about. Trust me, I’m not your “let’s grab dinner at the gas station” kind of gal. But, this is not your run-of-the mill gas station fare. Nope, not at all. Wawa’s got just about every sandwich, salad, soup, snack, or coffee beverage, prepared to your exact specifications and with fresh ingredients. This one had provolone (like always!), ketchup, tomato, and onion. This may have photographed terribly, but I assure you that it was delicious.
A “mystery of the fridge” salad– topped with strawberries, onions, tomatoes, turkey roll-ups, and a hard boiled egg. I topped it with a drizzle of Italian dressing. The strawberries were almost past their prime, but I managed to salvage them, and they ended up being incredibly sweet. There’s a plus side to overripe fruit!
A shrimp, marinara, and roasted squash + eggplant-stuffed pita. The summer squash was homegrown, and sadly we picked it too late, so the skin was too tough to eat. Simply removing the skin solved the problem, yielding a perfectly delicious vegetable. I have to thank my dad for maintaining such an expansive garden this summer. We’ve enjoyed an impressive array of corn, carrots, romaine lettuce, potatoes, string beans, squash, and more– all in our backyard. I’m going to miss this!
“Chocolate-dipped Strawberry” overnight oats: 1/2 cup old-fashioned oats + 1/2 cup unsweetened vanilla almond milk + 1/2 cup plain Greek yogurt + 1 tablespoon chia seeds + 1 tbsp cocoa powder + 1/4 teaspoon vanilla extract + Truvia. The addition of cocoa powder was delicious.
A Vanilla Golden Crunch Chobani Flip. I adore praline pecans, so when I saw this at the store a few weeks ago, I figured I’d give it a try. I expected nothing short of delicious from Cho, and they certainly delivered. I loved the combination of granola, corn flakes, and praline pecans that were sweet, salty, and crunchy. The vanilla yogurt itself was also perfect– not too sweet, yet held its own against the flavor of the mix-ins.
